    These muffin tin egg bites are a brilliant go-to for busy mornings. They’re high in protein, naturally low in carbs, and incredibly versatile—perfect whether you’re following a keto diet or just want a quick, wholesome breakfast.


    🧁 Muffin Tin Egg Bites (Easy, Keto-Friendly Breakfast)

    These egg bites are fluffy, flavour-packed, and ideal for meal prep. You can mix and match fillings depending on what’s in your fridge, which keeps things interesting throughout the week.


    🛒 Ingredients (makes 10–12 egg bites)

    • 6 large eggs
    • 60ml double cream (for extra richness)
    • 100g grated cheddar cheese
    • 100g cooked bacon or ham, chopped
    • 1/2 red pepper, finely diced
    • 2 tbsp spinach, chopped
    • Salt and black pepper, to taste
    • Butter or oil (for greasing the tin)

    Preheat your oven to 180°C (160°C fan). Lightly grease a muffin tin to prevent sticking.

    In a mixing bowl, whisk together the eggs and double cream until smooth. Season with salt and pepper.

    Evenly distribute the bacon, cheese, pepper, and spinach into each muffin cup. Then pour the egg mixture over the fillings, filling each cup about three-quarters full.

    Bake for 15–20 minutes, or until the egg bites are set and slightly golden on top. Let them cool for a few minutes before removing—they’ll firm up as they sit.
