    These easy ham egg muffin cups are a simple, low-carb twist on classic breakfast muffins. They’re protein-packed, naturally gluten-free, and perfect for meal prep or a quick grab-and-go start to the day.


    🧁 Ham Egg Muffin Cups (Keto-Friendly & Easy Breakfast)

    ⭐ Why you’ll love them

    Instead of using pastry or bread, slices of ham form the “cup”, which keeps everything low-carb and keto-friendly. They’re quick to assemble and bake, yet feel a bit special—ideal for brunch or weekday breakfasts alike.


    🛒 Ingredients (makes 6–8 cups)

    • 6–8 slices of ham (thin but sturdy)
    • 6 large eggs
    • 50g grated cheddar cheese
    • 1/2 small onion, finely diced
    • 1/2 red pepper, finely chopped
    • Salt and black pepper, to taste
    • Fresh chives or parsley (optional)

    👩‍🍳 Method

    Preheat your oven to 180°C (160°C fan). Lightly grease a muffin tin to help with release.

    Gently press each slice of ham into the muffin cups, shaping them into little “baskets”. Make sure the edges come slightly above the rim to hold the filling.

    Scatter a bit of onion, pepper, and cheese into each ham cup. Then crack an egg into each one (or whisk the eggs first for a more uniform texture).

    Season with salt and pepper. Bake for 15–18 minutes, depending on how runny or firm you like your yolks.

    Let them cool for a few minutes before removing. Finish with fresh herbs if you like.

    These ham and egg cups work beautifully on their own, but you can also serve them with:

    • Sliced avocado for healthy fats
    • A light green salad
    • Roasted tomatoes or mushrooms

    🔍 Tips for perfect ham egg cups

    Use slightly thicker-cut ham so it holds its shape during baking.
    If you prefer fully set eggs, bake a couple of minutes longer.
    Add a spoonful of cream or a sprinkle of mozzarella for extra richness.
