    If you’re after a quick, no-fuss meal that still hits those classic pizza cravings, English muffin pizzas are hard to beat. They’re crisp on the outside, soft in the middle, and ready in under 15 minutes—ideal for busy weeknights or casual snacking.

    These mini pizzas are brilliantly versatile. You get that golden, crunchy base from the toasted English muffin, while the toppings melt into a proper cheesy, saucy bite. Plus, they’re perfect for using up odds and ends in the fridge.


    🛒 Ingredients (serves 2–4)

    • 2–4 English muffins, split in half
    • 120ml pizza sauce (or passata with herbs)
    • 150g mozzarella cheese, grated
    • 1 tsp dried oregano or Italian seasoning
    • 1 tbsp olive oil

    Optional toppings:

    • Pepperoni or cooked sausage
    • Sliced mushrooms
    • Olives
    • Sweetcorn
    • Bell peppers
    • Fresh basil

    Preheat your oven to 200°C (180°C fan). Split the English muffins and place them cut-side up on a baking tray.

    Lightly brush each half with olive oil—this helps create that crisp base. Pop them in the oven for 3–4 minutes to pre-toast. This step makes all the difference.

    Remove from the oven, then spread a spoonful of pizza sauce over each half. Don’t overload it, or they can go soggy.

    Sprinkle over the mozzarella, followed by your chosen toppings. Finish with a pinch of oregano.

    Bake for 8–10 minutes, until the cheese is melted and bubbling with lightly golden edges.
