    • 500g minced pork (or chicken/turkey for a leaner option)
    • 1 tbsp sesame oil
    • 3 cloves garlic, finely chopped

    • 1 medium cabbage (or 400g pre-shredded coleslaw mix)
    • 2 tbsp soy sauce (or tamari for gluten-free)
    • 1 tbsp rice vinegar
    • 1 tsp chilli flakes (optional)
    • 2 spring onions, sliced
    • Salt and pepper, to taste

    Optional toppings:

    • Sesame seeds
    • Sriracha or chilli oil
    • Fresh coriander

    Heat the sesame oil in a large pan or wok over medium-high heat. Add the minced pork and cook until browned, breaking it up as it cooks.

    Next, stir in the garlic, ginger, and onion. Cook for 2–3 minutes until fragrant and slightly softened. At this point, your kitchen should smell incredible.

    Add the shredded cabbage and toss everything together. Cook for around 5–7 minutes, stirring occasionally, until the cabbage softens but still keeps a slight crunch.

    Pour in the soy sauce and rice vinegar, then season with salt, pepper, and chilli flakes if you like a bit of heat. Stir well and let everything cook for another couple of minutes so the flavours meld.

    Finish with sliced spring onions and your choice of toppings.
