    If you want a fun, bakery-style treat without complicated steps, these sugar cookie cups in a muffin tin are a winner. They’ve got soft, buttery edges with a slightly crisp bite, plus a hollow centre ready for all sorts of fillings.

    🍪 Sugar Cookie Cups (Muffin Tin Recipe)

    🛒 Ingredients (makes 12 cookie cups)

    • 150g unsalted butter, softened
    • 150g caster sugar
    • 1 large egg
    • 1 tsp vanilla extract
    • 250g plain flour
    • 1/2 tsp baking powder
    • 1/4 tsp salt

    Optional fillings:

    • Buttercream or cream cheese frosting
    • Chocolate ganache
    • Lemon curd
    • Fresh fruit and whipped cream

    👩‍🍳 Method

    Preheat your oven to 180°C (160°C fan) and grease a muffin tin well.

    In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract until smooth.

    In a separate bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.

    Divide the dough into 12 portions and press each one into the muffin cups, pushing it up the sides to form a “cup” shape.

    Bake for 10–12 minutes, until the edges are lightly golden.

    As soon as they come out of the oven, gently press the centre of each with the back of a spoon (if needed) to reinforce the cup shape. Allow them to cool completely before removing from the tin.

    Once cooled, fill your sugar cookie cups with:

    • Vanilla buttercream and sprinkles
    • Chocolate ganache and berries
    • Lemon curd with a dusting of icing sugar
    • Nutella and chopped hazelnuts

    Grease the tin well or use non-stick for easy release.
