    If you’re after something wholesome that doesn’t taste like a compromise, these raisin bran muffins deliver. They’re soft, lightly spiced, and packed with fibre—perfect for breakfast or a steady mid-morning bite.


    🧁 Raisin Bran Muffins (Moist, Fibre-Rich & Easy)

    These bran muffins with raisins strike a lovely balance between hearty and tender. The bran adds depth and texture, while the raisins bring natural sweetness. Even better, they stay moist for days—ideal for batch baking.


    🛒 Ingredients (makes 10–12 muffins)

    • 200g wheat bran (or bran cereal)
    • 250ml milk (or buttermilk for extra tang)
    • 125g plain flour
    • 100g light brown sugar
    • 1 tsp baking powder
    • 1 tsp bicarbonate of soda
    • 1/2 tsp salt
    • 1 tsp ground cinnamon
    • 2 large eggs
    • 80ml vegetable oil (or melted butter)
    • 1 tsp vanilla extract
    • 120g raisins

    👩‍🍳 Method

    Preheat your oven to 180°C (160°C fan) and line a muffin tin with cases.

    First, soak the bran in the milk for about 10 minutes. This step softens the texture and helps create that signature moist crumb.

    Meanwhile, whisk together the flour, sugar, baking powder, bicarbonate of soda, salt, and cinnamon in a large bowl.

    In another bowl, beat the eggs with the oil and vanilla. Stir this mixture into the soaked bran, then fold everything into the dry ingredients. Mix gently—just until combined.

    Fold in the raisins, then divide the batter evenly between the muffin cases.

    Bake for 18–22 minutes, or until a skewer inserted into the centre comes out clean. Let them cool slightly before serving.
