    A cool, crisp, and refreshing cucumber salad tossed in a simple tangy vinegar dressing. Perfect as a light side dish for grilled foods, sandwiches, or summer dinners.

    Ingredients (Serves 4)

    • 2 large cucumbers, thinly sliced
    • ¼ red onion, thinly sliced (optional)
    • 3 tbsp white vinegar or apple cider vinegar
    • 1 tbsp olive oil
    • 1 tsp sugar or honey (optional)
    • Salt and black pepper to taste
    • 1 tbsp fresh dill or parsley, chopped

    Instructions

    1. Slice cucumbers
      Thinly slice cucumbers and onion and place in a bowl.
    2. Prepare dressing
      Whisk together vinegar, olive oil, sugar, salt, and pepper.
    3. Combine
      Pour dressing over cucumbers and toss well.
    4. Chill
      Refrigerate for 15–30 minutes before serving for best flavor.
