Ingredients (Serves 4–6)
- 1 cup dry orzo pasta
- 1½ cups cherry tomatoes, halved
- 8 oz fresh mozzarella pearls
- ¼–½ cup fresh basil, torn
- 2 tbsp olive oil
- 1½ tbsp balsamic vinegar
- 1 garlic clove, minced
- Salt and black pepper to taste

Instructions
- Cook the orzo
Boil orzo in salted water until tender. Drain and rinse under cool water. - Make the dressing
Whisk together olive oil, balsamic vinegar, garlic, salt, and pepper. - Combine ingredients
In a large bowl, mix orzo, tomatoes, mozzarella, and basil. - Toss & serve
