This is that soft, fluffy bread with herbs baked right in and melty cheese on top—the kind that makes sandwiches taste illegal. Smells like a bakery. Tastes like comfort. Disappears suspiciously fast.

Perfect for subs, garlic bread vibes, or just tearing off warm pieces like a bread goblin. No judgment. 🍞🧀✨

    Why This Recipe is Awesome

    • Soft, fluffy inside
    • Cheesy, herby crust on top
    • Perfect for sandwiches or dipping
    • Way better fresh than store-bought

It feels fancy, but it’s just good bread doing its job.

    Ingredients You’ll Need

    Dough

    • 3 ½ cups all-purpose flour
    • 2 ¼ tsp instant yeast (1 packet)
    • 1 tbsp sugar
    • 1 tsp salt
    • 1 cup warm water
    • 2 tbsp olive oil

    Herb & Cheese Topping

    • 1 cup shredded mozzarella or provolone
    • 1 tbsp dried Italian seasoning
    • ½ tsp garlic powder
    • 1 tbsp grated Parmesan

    Step-by-Step Instructions

    1. Mix the dough.
In a large bowl, combine flour, yeast, sugar, and salt. Add warm water and olive oil. Mix until a shaggy dough forms.
    2. Knead.
Knead 8–10 minutes until smooth and elastic. Dough should feel soft, not sticky.
    3. First rise.
Place dough in a greased bowl. Cover and let rise 1 hour until doubled.
    4. Shape.
Punch down dough and shape into a loaf or long sandwich-style log. Place on baking sheet.
    5. Second rise.
Cover and let rise 30 minutes.
    6. Add toppings.
Brush top lightly with water or oil. Sprinkle cheese, Italian seasoning, garlic powder, and Parmesan.
    7. Bake.
Bake at 375°F (190°C) for 20–25 minutes until golden and cheese is bubbly.
    8. Cool slightly.
Let cool at least 10 minutes before slicing.

    Common Mistakes to Avoid

    • Using water that’s too hot. Yeast does not enjoy boiling baths.
    • Not kneading enough. Dense bread incoming.
    • Skipping the second rise. Structure matters.
    • Cutting while piping hot. Steam escape = gummy texture.

    Alternatives & Substitutions

    • Add cheddar for extra cheesiness.
    • Mix herbs into dough for stronger flavor.
    • Whole wheat? Replace up to 1 cup flour.
    • Make rolls instead of a loaf.

This bread also makes elite garlic bread.

    FAQ

    Can I make it ahead?
Yes, refrigerate dough after first rise.

    Can I freeze it?
    Yes, wrap well after baking.

    Why is my bread dense?
    Not enough kneading or rising.

    Best cheese to use?
    Mozzarella + Parmesan combo wins.

Do I need a stand mixer?
    Nope, hands work great.

    Can I add olives?
    Yes, and it’s amazing.

    Final Thoughts

Italian Herbs and Cheese Bread is soft, cheesy, and packed with flavor. Perfect for sandwiches, soups, or just warm slices with butter.

Bake a loaf, slice it thick, and enjoy peak homemade bread energy. 🍞✨
