Ingredients (Serves 4–6)
- 20 oz refrigerated cheese tortellini
- 1½ cups cherry or grape tomatoes, halved
- 8 oz fresh mozzarella pearls
- ½ cup fresh basil, chopped or torn
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp balsamic glaze (optional)
- 1 garlic clove, minced
- Salt and black pepper to taste
Optional Add-Ins
- Grilled chicken
- Salami or prosciutto
- Baby spinach or arugula
- Pesto drizzle
- Parmesan cheese
Instructions
- Cook tortellini
Boil according to package directions until tender. Drain and rinse under cool water. - Make dressing
Whisk olive oil, balsamic vinegar, garlic, salt, and pepper together. - Assemble salad
Combine tortellini, tomatoes, mozzarella, and basil in a large bowl. - Toss & finish
Add dressing and gently toss. Drizzle with balsamic glaze before serving if desired.
