    If you’re after something quick, comforting, and a little bit playful, a muffin cake is the perfect hybrid. It combines the soft, fluffy texture of a classic sponge with the ease of a muffin—no layers, no fuss, just one beautifully baked cake.

    🛒 Ingredients (serves 6–8)

    • 200g plain flour
    • 150g caster sugar
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 120ml milk
    • 100ml vegetable oil (or melted butter)
    • 2 large eggs
    • 1 tsp vanilla extract

    Preheat your oven to 180°C (160°C fan). Grease and line a small cake tin (around 20cm) or use a deep muffin tin for a more rustic look.

    In a large bowl, whisk together the flour, sugar, baking powder, and salt.

    In a separate bowl, mix the milk, oil, eggs, and vanilla extract until smooth. Pour the wet ingredients into the dry and gently fold until just combined—don’t overmix, or the cake can turn dense.

    Fold in any add-ins, then pour the batter into your prepared tin.

    Bake for 30–35 minutes, or until a skewer inserted into the centre comes out clean. Let it cool slightly before slicing.
