It’s cozy, rich, and tastes like restaurant comfort food—but you’re making it in sweatpants. We support this lifestyle. 🥣✨

    Why This Recipe is Awesome

    • Creamy, hearty, and filling
    • Big flavor from simple ingredients
    • Perfect for cold days
    • Tastes even better the next day

    It’s soup with main-character energy.

    Ingredients You’ll Need

    • 1 lb Italian sausage (mild or spicy)
    • 1 tbsp olive oil (if needed)
    • 1 small onion, diced
    • 3 cloves garlic, minced
    • 4 cups chicken broth
    • 3 medium potatoes, sliced thin
    • 1 cup heavy cream
    • 2 cups chopped kale (or spinach)
    • Salt & black pepper
    • Red pepper flakes (optional)

    Step-by-Step Instructions

    1. Brown the sausage.
In a pot over medium heat, cook sausage until browned. Remove and set aside.
    2. Cook aromatics.
In same pot, add onion and cook until soft. Stir in garlic for 30 seconds.
    3. Add broth and potatoes.
Pour in chicken broth and add potatoes. Simmer 15 minutes until tender.
    4. Return sausage.
      Add sausage back to pot.
    5. Add cream.
Stir in heavy cream and let simmer gently.
    6. Add greens.
Stir in kale and cook until wilted.
    7. Season.
Add salt, pepper, and red pepper flakes to taste.
    8. Serve.
      Top with Parmesan and enjoy.

    Common Mistakes to Avoid

    • Cutting potatoes too thick. They cook unevenly.
    • Boiling hard after cream is added. Keep it gentle.
    • Skipping seasoning. Taste and adjust.
    • Using lean sausage only. Flavor matters.

    Alternatives & Substitutions

    • Turkey sausage works too.
    • Dairy-free? Use coconut cream.
    • Add bacon for extra richness.
    • Spinach instead of kale.

    This soup freezes pretty well.
