    Arancini are what happen when leftover risotto decides to live its best life. Golden, crunchy on the outside, creamy rice on the inside, and usually a melty cheese surprise in the middle. Snack? Appetizer? Full personality? Yes.

    They look fancy, taste incredible, and make you feel like you casually fry Italian street food at home. Respect. 🇮🇹✨

    Ingredients You’ll Need

    • 3 cups cold risotto (very important: cold & firm)
    • ½ cup grated Parmesan
    • 1 cup mozzarella cubes (small pieces)
    • 2 eggs
    • 1 cup flour
    • 1 ½ cups breadcrumbs
    • Salt & pepper
    • Oil for frying

    Optional fillings:

    • Cooked sausage
    • Peas
    • Mushrooms
    • Marinara on the side

    Step-by-Step Instructions

    1. Prep the rice.
      Make sure risotto is cold. Mix in Parmesan, salt, and pepper.
    2. Shape the balls.
      Scoop about 2 tbsp rice, flatten in hand, add a cube of mozzarella, and roll into a ball.
    3. Set up breading station.
      Bowl 1: flour. Bowl 2: beaten eggs. Bowl 3: breadcrumbs.
    4. Bread them.
      Roll each ball in flour, then egg, then breadcrumbs. Press crumbs on well.
    5. Chill.
      Refrigerate 15–20 minutes to help them hold shape.
    6. Heat oil.
      Heat oil in deep pan to about 350°F (175°C).
    7. Fry.
      Fry in batches until golden brown, about 3–4 minutes.
    8. Drain.
      Place on paper towels.
    9. Serve.
      Serve hot with marinara sauce.

    Common Mistakes to Avoid

    • Using warm risotto. Balls fall apart.
    • Skipping chill time. Structural collapse incoming.
    • Overcrowding oil. Temperature drops.
    • Making balls too big. Centers won’t heat.

    Alternatives & Substitutions

    • Bake instead of fry: 400°F (200°C) for 20–25 min, spray with oil.
    • Air fryer works great too.
    • Use different cheeses like provolone or fontina.
    • Add meat sauce inside for classic Sicilian style.
