    • ½ cup grated Parmesan cheese
    • ½ tsp Italian seasoning
    • Salt & black pepper to taste
    • Red pepper flakes (optional)

    Step-by-Step Instructions

    1. Cook tortellini.
      Boil according to package directions. Drain and set aside.
    2. Start the sauce.
      In a large skillet, heat olive oil over medium heat. Add garlic and cook 30 seconds.
    3. Add sun-dried tomatoes.
      Stir and cook 1 minute to release flavor.
    4. Pour in liquids.
      Add heavy cream and chicken broth. Stir and simmer 3–4 minutes.
    5. Season.
      Add Italian seasoning, pepper, and red pepper flakes if using.
    6. Add cheese.
      Stir in Parmesan until sauce thickens.
    7. Combine pasta.
      Add cooked tortellini and toss gently to coat.
    8. Add extras.
      Stir in spinach until wilted if using.
    9. Serve.
      Garnish with more Parmesan and fresh basil.
