    • 3 lbs beef chuck roast (or short ribs)

    🌶 The Chile Sauce (The Heart of Birria)

    • 4 dried guajillo chiles
    • 3 dried ancho chiles
    • 2 dried pasilla chiles (optional but traditional)
    • 1 medium onion
    • 4 cloves garlic
    • 2 tomatoes (or 1 cup canned tomatoes)
    • 1 teaspoon cumin
    • 1 teaspoon dried oregano (Mexican oregano preferred)
    • ½ teaspoon cloves
    • 1 cinnamon stick
    • 2 bay leaves
    • 2 tablespoons apple cider vinegar
    • 4 cups beef broth

    ✨ Optional: Add chipotle for smokiness.

    Step 1: Prepare the Chiles

    Bring to gentle boil, then reduce heat and cover.

    Simmer 3 hours until meat is fork-tender.

    Remove beef and shred.

    Return shredded meat to the rich consommé.
