Ingredients
1 cup milk (almond, coconut, or regular)
3 tbsp chia seeds
1–2 tbsp honey or maple syrup
½ tsp vanilla extract
½ cup fresh or frozen raspberries
Extra raspberries for topping
Instructions
1. Mash the Raspberries
In a bowl, lightly mash the raspberries with a fork.
2. Mix Everything
Add milk, chia seeds, honey, and vanilla.
Stir well to prevent the seeds from clumping.
3. Chill
Cover and refrigerate at least 2 hours, preferably overnight.
Stir once after 10 minutes to ensure even thickening.
4. Serve
Once thick and creamy, top with more raspberries.
Add nuts, coconut flakes, or granola if desired.
Notes
Use coconut milk for an extra creamy pudding.
Blend raspberries and milk together for a smoother texture.
Add chocolate chips or yogurt for variation.
