Ingredients

  1. 6 large eggs, hard-boiled
  2. 3 tbsp mayonnaise
  3. 1 tbsp softened butter
  4. 1 tsp yellow or Dijon mustard
  5. 1 tsp sweet relish
  6. 1 tsp white vinegar or pickle juice
  7. 1/8 tsp garlic powder
  8. 1/8 tsp sugar (optional)
  9. Salt & pepper to taste
  10. Paprika, for garnish
  11. Optional: chopped chives or parsley

Instructions

  1. Slice the hard-boiled eggs in half lengthwise and remove the yolks.
  2. Mash yolks with mayonnaise, softened butter, mustard, relish, and vinegar until smooth.
  3. Add garlic powder, salt, pepper, and a tiny pinch of sugar if desired.
  4. Spoon or pipe the mixture into egg whites.
  5. Sprinkle with paprika and top with chives or parsley if desired.
  6. Chill for 20 minutes before serving for best flavor.

Notes

  • Softened butter is the key to the ultra-silky “million dollar” filling.
  • For extra smooth yolk mixture, press the yolks through a fine mesh strainer.
