Ingredients
- 1 ½ cups all-purpose flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- Zest of 1 lemon
- 1 egg
- ½ cup milk
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 1 cup blueberries (fresh or frozen)
Instructions
- Preheat oven to 200°C (400°F). Line a muffin pan.
- In a bowl, mix flour, sugar, baking powder, salt, and lemon zest.
- In another bowl, whisk egg, milk, oil, vanilla, and lemon juice.
Pour wet mixture into dry and stir gently. - Fold in the blueberries.
Fill muffin cups ¾ full. - Bake 18–20 minutes until golden and a toothpick comes out clean.
