Ingredients
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
Instructions
- Preheat oven to 400°F (200°C). Line a muffin pan.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, oil, eggs, and vanilla.
- Combine wet and dry ingredients—do NOT overmix.
- Fold in blueberries gently.
- Fill muffin cups to the top.
- Bake 18–20 minutes until golden and fluffy.
Notes
Use frozen blueberries without thawing.
Add a sprinkle of sugar on top for a crunchy finish.
Replace buttermilk with yogurt if needed.
