Ingredients

  1. 2 cups all-purpose flour
  2. 3/4 cup sugar
  3. 2 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1/2 tsp salt
  6. 1 cup buttermilk
  7. 1/3 cup vegetable oil
  8. 2 large eggs
  9. 1 tsp vanilla extract
  10. 1 1/2 cups fresh blueberries

Instructions

  1. Preheat oven to 400°F (200°C). Line a muffin pan.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk buttermilk, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients—do NOT overmix.
  5. Fold in blueberries gently.
  6. Fill muffin cups to the top.
  7. Bake 18–20 minutes until golden and fluffy.

Notes

Use frozen blueberries without thawing.

Add a sprinkle of sugar on top for a crunchy finish.
Replace buttermilk with yogurt if needed.
