Ingredients
- 1½ lbs (700 g) chicken, cut into pieces
- 2 tbsp oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp paprika
- 1 tsp ground cumin
- 1 can (14 oz) crushed tomatoes
- 1 cup coconut milk or cream
- Salt & pepper to taste
Instructions
- Heat oil in a pan over medium heat.
- Sauté onion until soft. Add garlic and ginger.
- Stir in spices and cook 30 seconds.
- Add chicken and brown lightly.
- Add tomatoes and coconut milk.
- Simmer 20–25 minutes until chicken is cooked.
- Adjust seasoning and serve hot.
