Ingredients

  1. 2 cups all-purpose flour
  2. 3/4 cup sugar
  3. 2 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1/2 tsp salt
  6. 1 cup buttermilk
  7. 1/3 cup melted butter or oil
  8. 2 large eggs
  9. 1 tsp vanilla extract
  10. 1 1/2 cups fresh or frozen blueberries
  11. Crumble Topping:
  12. 1/2 cup flour
  13. 1/3 cup brown sugar
  14. 1 tsp cinnamon
  15. 4 tbsp cold butter, cubed

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tray with liners.
  2. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, melted butter, eggs, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in blueberries gently.
  6. Prepare crumble: mix flour, brown sugar, and cinnamon, then rub in butter until crumbly.
  7. Spoon batter into muffin cups and top generously with crumble.
  8. Bake 18–22 minutes until golden and fully cooked.
