- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/3 cup melted butter or oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- Crumble Topping:
- 1/2 cup flour
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 4 tbsp cold butter, cubed
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tray with liners.
- In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, melted butter, eggs, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fold in blueberries gently.
- Prepare crumble: mix flour, brown sugar, and cinnamon, then rub in butter until crumbly.
- Spoon batter into muffin cups and top generously with crumble.
- Bake 18–22 minutes until golden and fully cooked.
