Ingredients

  1. 1 ½ cups all-purpose flour
  2. ¾ cup sugar
  3. 2 tsp baking powder
  4. ½ tsp salt
  5. 1 large egg
  6. ½ cup milk
  7. ⅓ cup vegetable oil
  8. 1 tsp vanilla extract
  9. 1 cup fresh or frozen blueberries

Instructions

  1. Heat oven to 200°C (400°F). Line a muffin tray with paper liners.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, whisk egg, milk, oil, and vanilla.
  4. Pour wet mixture into dry mixture and stir gently (don’t overmix).
  5. Fold in the blueberries.
  6. Fill muffin cups ¾ full.
  7. Bake for 18–20 minutes until golden and a toothpick comes out clean.
  8. Let cool and enjoy!
