Ingredients
- 1 ½ cups all-purpose flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 large egg
- ½ cup milk
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Heat oven to 200°C (400°F). Line a muffin tray with paper liners.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk egg, milk, oil, and vanilla.
- Pour wet mixture into dry mixture and stir gently (don’t overmix).
- Fold in the blueberries.
- Fill muffin cups ¾ full.
- Bake for 18–20 minutes until golden and a toothpick comes out clean.
- Let cool and enjoy!
